Sophie’s Fresh Tomato, Peach, and Burrata Salad celebrates Alabama’s summer bounty. Hey Birmingham! This salad is a celebration of all things fresh and flavorful. When you’re picking out your ingredients, make sure to choose the ripest Alabama-grown tomatoes and Chilton County freestone peaches you can find. Their natural sweetness is key to making this dish shine.

This salad is basically summer on a plate—juicy, delicious, and incredibly simple. Perfect for when you want to enjoy the peak flavors of the season. Pair it with grilled or baked chicken thighs for a well-balanced and easy weeknight dinner. It’s sure to be a hit at your next cookout!

Pro Tips for the Perfect Salad:

  1. Tomatoes: Look for tomatoes that are firm yet give slightly to pressure, indicating ripeness. Heirloom varieties add an extra burst of flavor and color.

2. Peaches: Freestone peaches are your best bet for easy slicing. They should smell fragrant and feel slightly soft at the stem end.

3. Corn: Fresh corn adds a delightful crunch. 

4. Burrata: This creamy cheese is a showstopper. Make sure it’s at room temperature before you tear it apart so it spreads easily.

5. Basil: Fresh basil leaves should be vibrant green and free from brown spots. Tear them gently to release their essential oils without bruising.

Ingredients:

  • 2 ripe fresh Alabama-grown tomatoes, sliced
  • 2 ripe fresh Chilton County freestone peaches, sliced
  • 1 ear fresh corn, cooked & kernels removed
  • 1 ball of burrata (about 4 ounces)
  • ¼ cup fresh basil, torn or chopped
  • Salt and pepper to taste

  • 2 tablespoons balsamic vinegar

Instructions:

Step 1: In a small bowl, mix together the balsamic vinegar and extra virgin olive oil to make the dressing. Set aside.

Step 5: Sprinkle the fresh basil on top.

Step 6: Give the dressing a good shake, then drizzle it over the salad.
