Hey Birmingham! This salad is a celebration of all things fresh and flavorful. When you’re picking out your ingredients, make sure to choose the ripest Alabama-grown tomatoes and Chilton County freestone peaches you can find. Their natural sweetness is key to making this dish shine.
This salad is basically summer on a plate—juicy, delicious, and incredibly simple. Perfect for when you want to enjoy the peak flavors of the season. Pair it with grilled or baked chicken thighs for a well-balanced and easy weeknight dinner. It’s sure to be a hit at your next cookout!
Pro Tips for the Perfect Salad:
- Tomatoes: Look for tomatoes that are firm yet give slightly to pressure, indicating ripeness. Heirloom varieties add an extra burst of flavor and color.

2. Peaches: Freestone peaches are your best bet for easy slicing. They should smell fragrant and feel slightly soft at the stem end.

3. Corn: Fresh corn adds a delightful crunch.
4. Burrata: This creamy cheese is a showstopper. Make sure it’s at room temperature before you tear it apart so it spreads easily.
5. Basil: Fresh basil leaves should be vibrant green and free from brown spots. Tear them gently to release their essential oils without bruising.
Ingredients:
- 2 ripe fresh Alabama-grown tomatoes, sliced
- 2 ripe fresh Chilton County freestone peaches, sliced
- 1 ear fresh corn, cooked & kernels removed
- 1 ball of burrata (about 4 ounces)
- ¼ cup fresh basil, torn or chopped
- Salt and pepper to taste
Dressing:
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
Instructions:
Step 1: In a small bowl, mix together the balsamic vinegar and extra virgin olive oil to make the dressing. Set aside.
Step 2: Slice the tomatoes and peaches. Arrange them on a serving plate in an alternating pattern.
Step 3: Scatter the cooked corn kernels over the top of the tomato and peach slices.
Step 4: Gently tear the burrata into pieces and distribute it evenly over the salad.
Step 5: Sprinkle the fresh basil on top.
Step 6: Give the dressing a good shake, then drizzle it over the salad.
Final step: Finish with a pinch of salt and a grind of fresh pepper to taste.
This vibrant salad captures the essence of summer with the sweet juiciness of ripe peaches and tomatoes, complemented by the creamy richness of burrata and the fresh pop of basil. The simple balsamic dressing ties it all together beautifully. Perfect for a light meal or as a stunning side at any gathering. Enjoy, and happy cooking!
